Primitive - characteristics of the vine
Although we do not know exactly where this variety comes from, we believe that its area of origin is Dalmatia. Today, it is widely grown, especially in southern Italy, where it is harvested in the second half of August. This is knowledge earlier than in the case of other grapes. Hence its name; the Latin "Primativus" expresses its early maturity, not perhaps simplicity.
What tastes and aromas are typical of these wines
At first glance, it attracts with its intense and deep ruby color with purple shades. When you smell it, you will smell red fruits such as black cherry, blackberry and plum. These fruity scents then complement the floral tones of violet. The character of ripe fruit so characteristic of younger wines changes over time into olfactory and taste sensations evoking jam. The aroma then acquires tertiary tones of cocoa, tobacco, licorice and carob, but also cinnamon and black pepper. The primitive is smooth on the palate, pleasantly full, with fine tannins and good persistence.
Combination with food
Thanks to its softness, higher alcohol content and tannin present, it is an ideal wine for pairing with any meat dishes - grilled red meat, stewed, roasted lamb, but also game such as wild boar - all of which will form a great balanced pair with it. More mature wines can easily replace the meditation ones or accompany the selection of aged cheeses.
